Week 2

[Posted by Ruth]

Just a quickie Saturday night.  We had some shrimp and thought we'd use them with the Asian Mix.  Stone Gardens had recommended sauteing the Asian Mix with olive oil and a bit of garlic and we just added the shrimp to that, tossed with hot cooked pasta and some fresh mozzarella.

Asian Mix with Shrimp
Makes 2 servings

Approx 1/4 lb (1/2 the bag) Asian Mix
3 cloves garlic - minced (more it you like it 'garlicky'
Olive Oil
1/2 lb Med/Large Shrimp - shelled and deveined
1/3 lb (about a third of a large ball) fresh mozzarella cut in cubes
1/3 lb (about 4 hands full) dry pasta - cooked to package directions.
Plenty of salt and pepper
3-4 T chopped basil or parsley

Cook pasta according to package directions - about 5 minutes before it's finished begin the topping.

Over low heat, gently cook the garlic in a generous amount of olive oil until softened and fragrant.  Do not brown.  Add the shrimp and Asian Mix, salt and pepper, raise the heat to med-med/high and saute until the shrimp are just cooked.  Fold in the cooked pasta and the mozzarella and sprinkle on the chopped basil.  Adjust seasoning and serve immediately (mozzarella will begin to melt very quickly).
